When we designed our distillery, we created our distillation process based on a POT STILL. True craft spirit producers here in the United States and around the world use a POT STILL. There is a distinct advantage to pot still distillation -

However, what you gain in flavor and complexity, you pay for in physical labor and time. Pot Stills have to be emptied and recharged after each production run. We don’t mind the extra work; we prefer using this original distillation technology because it creates the highest quality bourbons and ryes with the most distinctive flavors.
