However, what you gain in flavor and complexity, you pay for in physical labor and time. Pot Stills have to be emptied and recharged after each production run. We don’t mind the extra work; we prefer using this original distillation technology because it creates the highest quality bourbons and ryes with the most distinctive flavors.
