Mezcal: Questions & Answers

Why does mezcal taste smoky?

Traditional mezcal agave hearts are roasted in underground pits lined with hot stones and wood, which gives the spirit its signature smoky character.

Most mezcal comes from Oaxaca, but it can be produced in several Mexican states, including Durango, Guerrero, San Luis Potosí and Zacatecas.

What agave is used to make mezcal?

Mezcal can be made from more than 30 types of agave. Espadín is the most common. Wild varieties such as Tobalá and Tepeztate are rarer and more expensive.
