At La Alteña in the Highlands of Jalisco — the Camarena family distillery running since 1937 — estate-grown agave is slow-roasted in brick ovens, crushed under a two-ton volcanic tahona stone, and distilled to proof under fifth-generation master distiller Carlos Camarena. It shares a roof with Tapatio, and among bartenders and collectors it's shorthand for traditional, terroir-driven tequila.
