Cardinal Whiskey: A Taste of Wildlife and Climate Extremes
Cardinals pass through the distillery property at various times throughout the year as they migrate north and south. It’s nice to see their pops of red in the trees as they hunt for bugs and other forage on their way to their summer and winter homes.
Intense prolonged dry heat and a couple extreme cold snaps exposed this whiskey to climate extremes that have a tremendous impact on how the whiskey ages and the yield from the barrel. Flavor abounds in this whiskey driven by higher high temperatures and lower low temperatures.
Color: Mahogany
Nose: honey, vanilla wafers, cherry cordial, marshmallow fluff
Palate: creamy sweet mouthfeel with notes of pecan sandie cookies, creamed corn, cornbread, and baking spices
Finish: Long finish with black pepper and eucalyptus
