The piñas are then crushed using a horse-drawn stone mill called a Tahona, followed by fermentation in Awewete Wood Barrels for a naturally complex flavor profile.

Paquera Mezcal Espadin undergoes a double distillation process in copper pot stills, resulting in a smooth and balanced spirit. Each batch is carefully monitored and produced in limited quantities, with the 2016L batch labeled as PES7001.
