The agave piñas are cooked in a conical earthen oven for six days using mesquite and juniper wood, then macerated with a traditional horse-drawn stone mill called a Tahona.
The fermentation process takes place in Awewete Wood Barrels, allowing for natural fermentation to occur. The mezcal is then double-distilled in copper pot stills to ensure a smooth and complex flavor profile. Each batch is a limited size of 250L, with batch number PEN7001, and is bottled at 42.5% ABV in a 750ml bottle.
