Exploring the Essence: Paquera Mango Espadin
This mezcal pairs the spirit of Oaxaca with rich and bright notes of Mango. Made by Head Mezcalero Luis Juárez using 7-year Angustifolia Agave maguey from the San Agustín Amatengo Ejutla region, this Mezcal Artesanal with Mango undergoes a meticulous production process. The agave hearts are cooked for six days in a conical earthen oven with mesquite and juniper wood, then macerated using a traditional horse-drawn stone mill called Tahona. Fermentation takes place in Awewete Wood Barrels with natural fermentation, followed by double distillation in copper pot stills with a refrescadera.
